get rid of ancient distribution names

This is geared to make the documentation more current. In examples that are expected to work out of the box, bookworm is assumed. In text where stable is referenced, trixie is used (even if not yet released).

I also removed a reference about how to install a deb file on distributions before jessie that is just of historical evidence in those days.
