Unlike TOR it doesn't explicitly support outproxies to the clearnet and is its own contained network. The advantage I2P has over TOR is that it's conceived for P2P technologies like Bittorrent.
In the interest of supporting an additional privacy network, I2P might be a good consideration.

Last time I tried I2P on a headless server, it needed quite a few ports, and does not support running on a different webpath than /. Perhaps a subdomain would work instead.
The ports are configurable, so I don't think that'll be a problem, but what do you mean by webpath? I haven't dived into the code yet, but are you talking about a reverse-proxy?

The why is simple: it's an alternative to TOR and is optimized for decentralized anonymity. The biggest use-case would be anonymous torrents (which are frowned upon in TOR) and allowing to browse eepsites (the equivalent of onion sites) for a home network.
Work is being done on IPFS over I2P (at least I have read so on reddit) and that would help with anonymous websites and filesharing. IPFS would be my next proposal to add to plinth in order to reduce our dependency on servers.
I'm really interested in I2P generally. Can you give a more specific example maybe by using a persona like:
As a [ _____ ] I want to [ _____ ], so that I can [ ______ ].
I'm not into I2P but I fear we don't have a usecase to offer our audience based on its support (similar to Monkeysphere or TahoeLafs). Maybe I'm wrong and there is one?
I had a brief look at I2P. Some possible use cases including some mentioned by @yugiyoooo-guest (need someone to confirm these).
I2P provides an IRC server to which any IRC client can be connected. Users will be able to chat anonymously on this IRC network.
There are I2P messengers that can be used for chatting anonymously over the I2P network. However, I am not sure if I2P server on FreedomBox is needed for this.
There are I2P file sharing that can be used for sharing files anonymously (unlike Tor). However, I am not sure if I2P server on FreedomBox is needed for this.
I2P on FreedomBox could be used by browser a proxy server to reach eepsites (equivalent to Tor hidden sites).
I2P could be used to host eepsites (hidden services). May be existing services we have such as blog/wiki could be exposed on these eepsites (or at least I2P has it's own equivalent services).
