ejabberd: Automatically use coturn if installed

On Debian bullseye, I first installed Coturn, then Matrix, then Ejabberd.

• For Matrix, "Automatically manage audio/video call setup", is enabled by default.
• For Ejabberd, it is not enabled by default.
