Delay resolving the timestamp for the ISO volume to the moment the ISO-image is created

According to man lb_config the timestamp should match the timestamp of the generation. This MR matches the current behaviour but has the positive side-effect that calling lb config more than once will result in an identical configuration folder (the date is not resolved any more during the second invocation of lb config).
