Update package comparison table

Why this commit?

This commit updates the table on the Chapter 2. What's new in Debian 11.

The table's title have already been adjusted to buster and bullseye, the versions however still show the difference between Stretch and Buster.

What it does

This commit only updates the version numbers in the table in the whats-new.dbk file.

I haven't worked with automated documentations like this before. I hope this helps fixing the table on https://www.debian.org/releases/testing/i386/release-notes/ch-whats-new.en.html.

Obviously, this table could not have been updated 1 year ago as we wouldn't have known which versions ended up in bullseye. Now is a very reasonable time, indeed.
