test: Increase test coverage

The test coverage for unit tests is shown on the CI jobs page: https://salsa.debian.org/freedombox-team/plinth/-/jobs

(Note that this doesn't include functional tests, since they are not part of the CI pipeline, and it's not easy to measure their code coverage.)
