Resolve ftbfs due to the hardcoded lombok version

This MR addresses #1123383.

Lombok is used as an annotation processor and the version is set via the project property. This MR overrides lombok version to debian via maven.properties.

Testing:

  • rebuild in sid chroot
  • rebuild in Java 25 sid chroot
