minor config tidying

Lyndon Brown requested to merge jnqnfe/live-build:tidy_config into master
  • removes variable names from descriptions in the saved config files, which is pointless mess
  • tidies constructing the set of subdirectories

built upon MR #182 edit: rebased to avoid this
